Wonder Pork Burgers with Caramelized Onions

Ingredients
For the Burgers:
- 6 Wonder® Hamburger Buns
- 1.5 lbs. ground pork
- 1/4 cup Italian breadcrumbs
- 2 cloves garlic minced
- Juice from 1/2 lemon
- 2 tbsp. mayo
- 1 tbsp. grainy mustard (such as Creole)
- 1 egg
- 6 slices of cheddar cheese
- Arugula leaves
- Salt & pepper to taste
Caramelized Onions:
- 2 tbsp. olive oil
- 6 tbsp. butter
- 4 onions thinly sliced
- 1 tsp. ground thyme
- 2 bay leaves
- 1 cup beef broth
- 2 tbsp. light brown sugar
- 2 tbsp. balsamic vinegar
- Salt and pepper
Directions
To make caramelized onions:
- In a large skillet over medium heat, heat butter and olive oil.
- Add onions, salt, pepper, thyme and bay leaf. Saute on medium heat for about 30 minutes or until onions are caramelized, . Stirring constantly.
- Add broth, brown sugar, and balsamic vinegar. Stir with a spoon until sugar dissolves, and cook until liquid has evaporated, and onions are jammy and moist.
- Lower the heat to very low, keep warm until ready to serve.
To make burgers:
- In a large mixing bowl combine ground pork, breadcrumbs, garlic, lemon juice, mayo, mustard, egg,
- Divide mixture into 6 equal portions and form them into patties. Make the burger patties’ diameters slightly larger than your slider buns as they will shrink a bit, and make a small divot in the middle so they stay flat after being cooked.
- Oil grill and then pre-heat grill to medium-high heat. Add patties and cook for 4-5 minutes each side
- Toast Wonder® Hamburger buns to your preference.
To assemble:
- Place grilled patties over bottom bun, add lots of caramelized onions, and garnish it with fresh arugula leaves, cover with top bun and enjoy!
