Chicken Burger with Hummus and Quick Pickled Onions

Serves 4

Ingredients

  • 4 D’Italiano® 100% Whole Wheat Crustini Buns
  • 1 lb ground chicken
  • 1.5 cups seasoned bread crumbs
  • 2 tbsp fresh thyme
  • 1 tsp salt
  • 1 cup President’s Choice® Garlic Hummus
  • 1 red onion, thinly sliced
  • ½ cup pickling vinegar
  • 1 tbsp sugar
  • 2 tsp salt

Directions

  1. Whisk together pickling vinegar, sugar, and salt until well-combined. Place thinly sliced onions in the mixture, transfer to a glass jar and leave to sit for at least 1 hour.
  2. Combine chicken, bread crumbs, thyme, salt and pepper in mixing bowl. Using hands, mix until well combined, then form 4 patties.
  3. Cook patties on the barbecue for 10 minutes, or until cooked through.
  4. Toast buns on the grill.
  5. Place cooked chicken patties on toasted 4 D’Italiano® 100% Whole Wheat Crustini Buns buns, top generously with hummus and drained pickled onions.
